Born and bred in the North of England, a move to Manchester in his teens kick started his career in the drinks industry.

Dan worked in and ran some of Manchester’s best bars, before leaving for Australia and New Zealand in the mid 2000’s. After managing one of New Zealand’s best cocktail bars, he came to London where stints at Firmdale Hotels, Milk & Honey, HIX and L’Anima were interrupted by a season working on the East coast of Italy.

Developing menus for Richard Caring’s restaurant empire gave him a new experience, absolute quality in a simple, consistent and achievable way. During this time he launched the UK’s first nationwide mindful drinking menu for Bill’s, featuring Kombucha cocktails, CBD and healthy hot drinks.

During lockdown he was inspired to put his experience into drinks books, with the first, Mixed In Minutes due to be published by Little, Brown October 2021. Everything in the book is based around bar quality cocktails at home without the need for intimidating equipment or methods. Unique techniques that produce a more consistent, simple and achievable drink without taking up your precious time, dispelling the myths around the world of cocktails along the way. Around this he has started his own business teaching drinks, consulting, and partnering with brands.

His work is always bound by the same values: quality and excellence without pretence, simplicity, and making the drinks world approachable to a new audience.
